Shrimp & Fried Grits Appetizer
While we'd be happy eating our creole almost every night for supper sometimes another dish has to be the main attraction. This is an easy appetizer for a crowd — just prepare the grit cakes in advance and keep warm in the oven.
- Shrimp
- Carolina Creole®
- Luquire Fried Grits Cakes (see recipe below)
- Bacon, cooked and crumbled
- Green Onions, chopped
Simmer 1/2 lb. of shrimp with 1/2 a bottle of creole. Serve atop Luquire Fried Grit cakes and finish with bacon and green onions.
LUQUIRE FRIED GRITS CAKES
Pour leftover grits into a coffee cup or leftover soup or tomato paste can. Store in the refrigerator until they properly set — about two hours. Pop out of the cup and slice into 1 inch thick coins.
Heat oil in shallow pan and fry until nice and brown. Serve topped with Carolina Creole®.
